Grape Varieties by Appellation – AOP Les Baux de Provence

Below are grape varieties that conform to AOP Les Baux de Provence classification.  Varieties identified in black are red (also called “black”) grapes and those in green are white grapes.

The proportion by grape variety (specified below) refers to the percentage of the total area of the vineyard that must to be planted with a specific variety (referred to as encépagement).  Some AOP/AOC regulations will also specify a proportion of the blend (referred to as assemblage) for a given color of wine in order to be classified as an AOP/AOC wine.

Red Grenache, Mourvèdre, Syrah Cabernet Sauvignon, Carignan, Cinsaut, Counoise At least 60% of principal varieties without exceeding 90% of any one. A maximum of 30% of secondary varietals with no more than 20% of Cabernet Sauvignon.

The blend must include two grape varieties where at least one must be a principal variety.  The proportion of the principal variety or varieties must be greater than or equal to 50% of the blend.

Rosé Cinsaut, Grenache, Syrah Cabernet Sauvignon, Carignan, Counoise, Mourvèdre At least 60% of principal varieties without exceeding 90% of any one. A maximum of 30% of secondary varietals with no more than 20% of Cabernet Sauvignon. No more than 10% can be white grape varietals.

The blend must include two grape varieties where at least one must be a principal variety.  The proportion of the principal variety or varieties must be greater than or equal to 50% of the blend.

White Clairette, Grenache Blanc, Vermentino Roussane, Bourboulenc, Marsanne, Ugni Blanc At least 60% of principal varieties without exceeding 90% of any one. A maximum of 30% of secondary varietals with no more than 10% to 30% can be Roussanne without exceeding the proportion of Bourboulenc, Marsanne, Ugni Blanc.

The blend proportion for White wines must be equivalent to the proportion of planned encépagement for the grape varieties.
