Provençal Pairings: Wine with Food Throw Me a Beaune

What to you do when confronted with an exquisite bottle of wine for pairing with food? Do you go as fancy as you can? That is usually my thought. However, Susan and Towny had another idea; go with a simple, peasant dish. And that is what we did on Christmas Eve. Towny and I pulled together a recipe (from looking at several videos online) for Œufs en Meurette or, simply, Eggs in Meurette Sauce. For the recipe, head to Cocoa and Lavender.
Susan & Towny were gifted a bottle of 2016 Hospices de Beaune premier Cru Cuvée Guigone de Salins, and they generously shared it with us. This 100% Pinot Noir wine was a deep, inky, ruby color with a smoky nose of cherry, leather, and tobacco. First sips were velvety and rich, with flavors of rich earth, forest floor, dark fruits, and a touch of capsicum, finishing with smoky overtones. The finish is long and luxurious.
The wine paired beautifully with our egg dish — not something I would have imagined — and I look forward to having it again soon, especially as it is available stateside. Hospices de Beaune is an exquisite wine perfect for celebratory occasions and would pair well with grilled meats and poultry, strong cheeses, and — of course — peasant dishes like Les Œufs en Meurette.
