I Turned Back Time

For today’s pairing, I turned back time (with a nod to Cher) to a recipe I that first tasted on Easter Island in 2019. It is a grain-forward dish that is complemented by a plethora of seasonal vegetables. I didn’t officially get a recipe from the hotel chef… just a list of ingredients. I put the rest together myself and recreated his...

Never Have I Ever

If any of you are familiar with Garagiste, you know that sometimes they offer mystery wine purchases. They give a general description, but no real idea of what the varietals are or where it’s from. If the price is right, I enjoy playing the mystery game. I think of it as my wine-centered version of "never have I ever."...

Perle Blanche

When planning our recent trip to Morocco, none of our small group (which included PWZ’s Susan and Towny) had any idea there would be a winery owned by a man from Châteauneuf-du-Pape. But there we were and there he was. Charles Mélia moved to the small village of Ounara — just 20 minutes east of the seaside town of Essaouira — in 1994, and started Domaine du Val d’Argan.

Earlier in his life, he worked at his family’s vineyard, Château de la Font du Loup (in Châteauneuf-du-Pape) and, after exploring other wine growing areas (Argentina and New Zealand), he settled on Morocco. The climate was perfect for growing Rhône grapes such as Grenache Blanc, Viognier, Muscat, and Roussanne. Sadly, the...

If At First You Don’t Succeed…

Let me start by saying that I did succeed the first time with the wine pairing. What didn’t go so well was the execution of the recipe. Don’t get me wrong — all the flavors blended perfectly to pair with this exquisite wine, but my sous vide wand failed and the halibut was severely overcooked! Technology… sigh.

That said, the recipe — which I made twice before and twice since “the disaster” — is probably one of my best creations inspired by...

A Hybrid Pairing

When I looked on the Château Barbebelle website for pairing ideas for the 2022 release of their Cuvée Madeleine Rosé, I was torn between their suggestions for fatty fish — tuna, salmon, swordfish — and the fresh, lightness of ceviche. It brought to mind a sort of hybrid recipe of the two that I have been making...

Very rarely in life do you come across a Côtes du Rhône Villages so incredible that it might as well be a Gigondas. Today’s wine is exactly this. A nice upgrade. <.br>
It is big and bold, rich and intense, and it paired perfectly with my recipe for Steak with Hatch Chile Cream and Tomato-Corn Salsa. There is some spice...

Springing into Spring!

As we turn our thoughts to spring, there are foods and wines that come to mind immediately. On the food side of things, my mind turns to spring vegetables: asparagus, peas, fava beans. For wine, I find it time to leave the wintry red wines for a while and focus on the crisp, bright, floral whites. That isn’t to say I don’t enjoy a red with a...

“What is cassoulet?” You would be forgiven if you don’t know or if you thought it was simply a popular regional stew conceived in the South of France. Visions of a complex concoction may come to mind: beans, ham hocks, pork rinds, garlic...

I Like Big Reds and I Cannot Lie

Big reds. I love them. Châteauneuf-du-Pape has been a favorite since I was young, even the time when my father mortifyingly embarrassed me at a fine restaurant while I was in college. He had ordered a Châteauneuf-du-Pape to go with our meal; I was sitting on the inside seat of a cozy booth. The sommelier was a stunningly beautiful...

Rhapsody en Bleu

Five months ago, I wrote about a rosé bottled in green glass, and how that was — and still is — unusual for a rosé. Today’s wine, to take this one step further, is bottled in blue glass. The colored glass provides an ultraviolet filter to preserve the wine’s quality as long as possible. I’m glad for this blue glass, as the wine is quite...

Gabay and Bernheim’s Rosés of Southern France should be in your wine library

The recent publication of Rosés of Southern France is cause for great celebration among casual rosé drinkers and oenophiles alike. Elizabeth Gabay MW and Ben Bernheim have written an engaging and comprehensive book that not surprisingly centers on Provence rosé but it also includes rosés from all other neighboring regions in the South of France. Strange Bedfellows

Today’s pairing is one I approached with some trepidation. I was confident that the wine was going to be good (okay, excellent), and I knew the recipe well enough to be happy with it. But together? I just wasn’t sure. I certainly didn’t expect a full-on tug-of-war, but I had no idea it was going to turn out be one of my favorite pairings in recent...

Pink Wine of the Earth

Pink wine of the earth. That is what Randall Grahm calls his rosé. Its official name is Vin Gris de Cigare.  The reference to “cigare,” a French term for flying saucer, is a nod to the 1954 law in the Châteauneuf-du-Pape appellation which outlawed flying saucers from flying over the vineyards. Vin Gris typically refers to a very, very light rosé wine that results from next-to no maceration time (compared to the traditional rosé methods).

Seven grapes come “to the table” to create this wine; together, they make a unique and delicious rosé. But I am getting ahead of myself…

When White Is Pink

I was in a local, high-end wine store recently, looking (as I am wont to do) for Provence wines. That day, I was specifically looking for a red wine, though my expectations were low as Provence wines — other than rosé — are not generally stocked here in Tucson. The store manager confirmed that he had nothing red, but he had a really highly-rated Provence white for a great price ($21.00!). I took him at his word, without really looking at the bottle, and bought two. Now, I wish I had ...

Gruntled with Grenache

Pleased. Satisfied. Contented. Those are quotidian words describing one of my favorite not-so-quotidian words: gruntled. And I was fully gruntled with this 2017 Grenache from Kitá Winery in Lompoc, California. Sadly, I am disgruntled to have learned recently that this winery is closing.

They are the makers of the one and only Sauvignon Blanc that I have actually liked. No, not liked — loved! Their Chardonnay is truly excellent. I think Kitá vintner Tara Gomez is brilliant, as are her wines. And this Grenache is no exception. The good news is that I was able to find quite a few bottles of this wine still available...
